This simple, healthy wrap is a take on the traditional Norwegian matpakke. Matpakke is a lunch you take to school or work and most commonly includes an open-faced sandwich wrapped in parchment paper. This wrap is a great option for children to make as they head back to school or a tasty snack for a fall hike.
Ingredients:
- 1 whole grain tortilla
- 125 g cream cheese
- 3 full-sized carrots
- ½ a cucumber
Preparation:
- Cut the carrots and cucumbers into long strips.
- Spread the cream cheese over half of the tortilla (this will make it easier to roll up)
- Spread the carrot and cucumber over the cheese and roll together.
- Roll into parchment paper and divide into three.
