Do you know the Muffin Man? Not the one of Drury Lane fame, but one who went viral at the Paris Olympics? 

Two-time Olympic swimmer Henrik Christiansen, 27, made a huge splash in Paris with his social media presence. The Norwegian national record-holder fell in love with a double-chocolate muffin from the Olympic village cafeteria, and created a series of humorous TikTok videos about their decadence. His videos were viewed over 171 million times.  

While this is not a traditional Norwegian recipe, these muffins sound irresistible and had the internet clamoring to recreate the recipe. Just ask the Olympic Muffin Man, who gave them an 11 out of 10 points.  

Ingredients: 
Muffin batter: 
3 3/4 cups (780 g) sugar
3 3/4 cups (480 g) all-purpose flour
1 cup (100 g) cocoa powder
2 1/2 tsp. (9 g) baking soda 
4 tsp. (18 g) baking powder 
1 1/4 tsp. (7,5 g) salt 
4 large (240 g) eggs
3/4 cup (200 g) lukewarm water (1)
3/4 cup (150 g) canola oil 
1 1/3 cups plus 1 Tbsp. (335 g) lukewarm water (2)  

Chocolate Ganache:
1 cup (240 g) whole cream
1 cup (180 g) dark chocolate or chocolate chips
Dark chocolate chunks (buy prepared) – Add amount desired   

Instructions: 
Mix and sift all dry ingredients. Add the lukewarm water (1), egg and canola oil. Whisk into a smooth batter. Add lukewarm water (2) and stir until incorporated. (By adding the lukewarm water in two batches, you avoid lumps in the batter). Divide the batter into muffin tins. Use “tulip shaped” liners.

Bake at 320°-340° F (160-170°C) for about 15 minutes. 

Ganache: Chop up the chocolate and put it in a bowl.   

Heat the cream to a boil and pour it over the chocolate. 

Let sit 5 minutes, then stir cream and chocolate with a spatula until well-mixed with a thick, glossy consistency. Allow to cool slightly, then pour the ganache into a piping bag. Pipe ganache from the top into the center of the muffin and finish with a neat swirl on top of the muffin (make sure the muffin is slightly cooled before doing so).   

Top generously with chocolate chunks to finish.
