Ingredients for Taco Filling
- 1 lb. ground beef
- Butter or oil for frying
- 1 large onion, finely chopped
- 2-3 cloves garlic, finely chopped
- 1/2 red chili, finely chopped (to taste)
- 1 1/2 Tbsp. taco seasoning
- 1 large carrot, grated
- 3/4 of a can of tomatoes, chopped
- Sugar (to taste)
- 7 oz canned black beans
- Fresh cilantro, coarsely chopped
Ingredients for Guacamole
- 1 ripe avocado
- 1/4 red chili or more, finely chopped
- 1 clove garlic, finely chopped
- Salt and pepper
Ingredients for Mango Salsa
- 1 mango, diced
- 1 red onion, diced
- 1/2 red chili, finely chopped
- 1/2 lime juice
- Salt and pepper
- Fresh cilantro, coarsely chopped
Other Ingredients
- Taco shells or tortillas
- Cheese, grated
- Sour cream
- Lettuce, chopped
Sauté the onion, garlic and chili in butter or oil until the onion is shiny and soft. Set aside. Sauté the ground beef and add about 1 Tbsp. of the taco seasoning. Mix well. After a few minutes, add the onion mixture and grated carrot, and let it simmer for a few minutes. Add chopped tomatoes and let simmer for approximately 5 minutes on low heat. Add the beans and sugar, then season with more taco seasoning until you get the desired flavor. The taco filling is ready when the meat is cooked through and the beans are hot. Ground beef can be substituted with shredded chicken or beef.
Mix together all of the ingredients for the mango salsa. Let the salsa marinate for a while before serving, so that all the good flavors settle. Season with salt, pepper and cilantro.
Divide the avocado in half, remove the stone and dig out the pulp with a spoon. Mash the avocado with a fork or use a hand mixer, and squeeze the lime juice over top. Add the chili peppers, then season with salt and pepper and possibly more lime juice. Feel free to leave the avocado stone on top of the guacamole until serving to avoid discoloration.
Put the taco filling in taco shells or tortillas, and add fixings, guacamole and mango salsa to taste.
